port: 26.1 update and 1.0.0 release
- Bump Minecraft version to 26.1 and mod version to 1.0.0
- Switch Java target to 25 and update build environment
- Refactor UI and Item component access for 26.1 and owo-lib changes
- Updated item data component parsing for Containers and Bundles
- Adapted custom X-Ray and UI rendering code for the new 26.1 extraction rendering APIs
